Ingredients Needed

Ground beef – I use the 85/15 ground beef, but you can use whatever you have on hand.
Beef stock or Beef Broth – This makes the soup juicy and adds lots of flavor.
Frozen vegetables- I used a bag of mixed vegetables, corn, and frozen okra.

Grandma Hamburger Vegetable Soup

- Gather all the ingredients.
- Place a pan over medium heat and add ground beef to it. Add 1/2 chopped onion, and season with black pepper, parsley, and beef seasoning.
- Mix well and cook for 5 to 7 minutes until the beef becomes brown.
- Add diced canned tomatoes to the beef mix and tomato paste.
- Add frozen okra and mixed vegetables
- Add 1 1/2 cup beef stock to the beef and vegetable mixture.
- Using a sharp knife, peel and chop half of the remaining onion. Also, remove the core of the green bell pepper and the jalapeño pepper, deseed them, and dice them as well.
- Add green bell pepper, chopped onion, and Jalapeno to the pot. Cover the pot and reduce the heat. Let it simmer for 10 minutes.
- Take off the lid pour a cup of water and stir it.
- Add diced potatoes to the mixture.
- Stir to mix everything. Cover the pot with a lid, and let the mixture simmer on medium-low heat for 1 hour and 30 minutes or until the potatoes and the rest of the vegetables are tender.
- Once the vegetables are tender, serve this hearty soup with freshly baked bread as a side. Enjoy!
