On Thanksgiving Day when I was growing up, my mama would always cook a big dinner. For dessert, she would often pay someone to bake her cakes. Unfortunately, the cakes would always turn out to be horrible, and I felt like my mom was being taken advantage of. So, the following Thanksgiving, I volunteered to make her a Red Velvet Cake, and to my surprise, it turned out perfect! Everyone was shocked, and so was I. Since that day, my mom and brothers have begged me to make this cake. Finally, I decided to share this recipe with you.

Ingredients
  

  • 3 cups FLour
  • 3 cups Sugar
  • 2 tsp cocoa
  • 1 tsp soda
  • 1 tsp salt
  • 2 cups oil
  • 1 1/2 cups buttermilk
  • 2 eggs
  • 2 tsp vinegar
  • 1 tsp vanilla
  • 1 ounce bottle of red food coloring
  • 1 box confectioners sugar
  • 2 8 ounce packages cream cheese softened
  • 1 stick butter
  • 1 tsp vanilla
  • 1 cup chopped pecans

Instructions
 

  • Combine all ingredients and beat for five minutes—grease and flour 3 layer pans. Bake at 350 for 20 minutes.
